Summary
DescriptionBozbash from Iranian (Azeri) cuisine.jpg
English: "Bozbaş" or "Bozbash" from Iranian (Azeri) cuisine. (Some Azeris in Turkey, for example in Iğdır, and elsewhere (parts of Iran and Azerbaijan) call "piti" as "bozbaş". (Whereas in Kars it is "piti".) I ate this dish at an Iranian Azeri restaurant in Ankara. It is very similar to the "piti" or "bozbaş" we have in Turkey and Azerbaijan but I noticed that, other than chickpeas, they use dried white beans and they do not use the herb (what we call "sarıkök") that gives the dish its greenish yellow colour. Ah, they gave me something like a mortar handle or hammer, with which I was supposed to mash the food. I did not. I had a nice lunch.
